San Miguel de Salcedo

San Miguel de Salcedo, a modest Andean town in Ecuador's Cotopaxi province, is known for its traditional ice creams — a local specialty made only here — and sits on the left bank of the Cutuchi river with views of the surrounding mountains. Founded in 1573 and later shaped by the arrival of the Transandean Railway, the town has a modest central core with cafés and restaurants, and serves as a gateway to the eastern region of the country.
