Blanquette de Limoux, a sparkling wine first recorded in a 1544 text and now protected by a designated origin classification, has defined this small Aude town since the 16th century — its vineyards are credited as among the earliest to produce sparkling wine. Sitting on the River Aude in southern France's Occitanie region, Limoux also hosts a carnival that runs for several months, and carries a café and restaurant scene substantial for its size.
