Considered one of the cradles of flamenco and the fighting bull, Utrera is an Andalusian town in the province of Seville with a walkable historic centre — declared a protected heritage zone in 2002 — full of cafés and restaurants. Its 14th-century castle, five chapels spanning the 14th to 18th centuries, and a recently identified medieval synagogue (one of only five still standing in Spain) give the town a layered history stretching back to pre-Roman times. The local speciality mostachón, a cinnamon-and-sugar cake, is worth seeking out.
