Cuéllar's bull-running encierros, declared of International Tourist Interest and traced back to the 13th century, are considered the oldest in Spain — predating Pamplona's by centuries. This small Castilian town in Segovia province also holds an unusually dense collection of Mudéjar architecture, a well-preserved triple ring of medieval walls, a medieval castle, and numerous churches and monasteries. The Cega river runs through the surrounding plain, and the town centre supports a café and restaurant scene substantial for its size.
