Olive cultivation has defined Bitonto since at least the 13th century — the town west of Bari even lends its name to a local cultivar, cima di Bitonto — and the surrounding groves still anchor its economy today. Its cathedral is considered one of the finest examples of Apulian Romanesque architecture, and the town holds the largest diocesan museum in the region and Puglia's first national gallery. In May 1734, a battle here between Austrian and Bourbon forces led directly to the establishment of the Kingdom of Naples as an independent state.
